Christmas Treats For Your Meat!
Holiday dinner inspo anyone?

It’s hard to believe we’ve made it to the Thursday before Christmas. Welcome back to The Meat Platter and thanks for sticking with us.
This year has been awesome; full of new adventures, telling the stories of people we admire in the industry, meeting more of you guys, and spreading the good word about Meat Head. Yall are here for a reason, and we hope that reason is us.

Since this is our last newsletter before Christmas, we would be remiss not to share some dinner inspo to make ya look real fancy in front of your in-laws while providing the perfect distraction to keep from having too many responsibilities.
A show stopper protein is an easy place to start since yall are all grill masters anyway.
It’s gotta be a Christmas ham- classic, old school vibes all the way. The beef tenderloin can be pretty intimidating too but we are here to K.I.S.S. [does that joke still hit?]
Christmas Ham 101:
Step One: acquire a fully cooked spiral ham. Take that baby home.
Step Two: once you’re ready, light the grill (or smoker) gently. Chill on the blaze. Should be around 275°F.
Step Three: choose your smoking wood (apple or hickory would be our suggestions).
Step Four: warm that ham on indirect heat to about 140°F
Step Five: for the last 20–30 min glaze that baby with a mixture of equal parts brown sugar, honey, mustard
Step Six: Once you make it to temp- rest, slice, and watch the compliments flow
Beef Tenderloin Basics:
– Whole beef tenderloin, trimmed
– Salt, pepper, garlic, optional rosemary- this is where The Founder comes into play, fam!
– Sear hot (grill or pan), then finish indirect or in the oven at 400°F
– Pull at 125–130°F internal
– Rest 10–15 min
– Slice thick, serve smugly
