Itâs April and we hope you all survived fools day yesterday. Welcome back to the Meat Platter and the official beginning of longer afternoons that extend into the evenings because weâve got more sun in the sky than we know what to do with and boy, that makes us happy. {Quite the starter sentence there}.

This weeks addition- LAMB: 140°Fâ150°F (Medium)
Lamb has been associated with Easter meals for centuries, dating back to early religious traditions where it symbolized renewal and celebration.
Turns out weâve been pairing lamb and springtime long before backyard grills were part of the equation.
If you are feeling fancy this holiday weekend, you can keep things pretty simple and delicious with this easy lamb ârecipeâ.
Season lamb chops with salt, pepper, garlic, rosemary, and a little olive oil.
Grill over high heat for 3â4 minutes per side until medium-rare, then finish with a squeeze of lemon.
Thatâs it. Itâs the kind of recipe that feels appropriate for Easter but doesnât require a full production to pull off.
Holidays in the south just hit different- itâs hard to explain unless you grew up here, the nuances of the meals, the tradition of it all- but this article from Southern Living really encompasses what we love about those traditional Southern holiday meal elements.
Strawberry Pretzel Salad is a staple at our own gatherings and if you havenât tried it, drop everything and grab the groceries. You wonât regret it.
Weirdly, ham makes an appearance at year round gatherings. And if you want to try something a new, smoke your ham instead of baking it. A traditional Easter ham is already cooked â which means youâre really just adding flavor. A couple hours on the smoker with a light glaze (mustard + honey or brown sugar + vinegar) takes it from expected to memorable.
A fun fact: Ham became the centerpiece of Southern Easter meals largely because it was more affordable and accessible than lamb, eventually replacing it across much of the region.
Coolers can be clunky. This feels intentional.
A dedicated beverage tub keeps people from digging through your main cooler and gives your setup a cleaner look. Fill it with ice, load it with drinks, and let people help themselves.
